NONA Velvet Ruby
A festive alcohol-free cocktail created by Karola's kitchen.
Ingredients
The sage syrup (optional)
75g sugar
75g water
10g sage leaves
The mocktail
100ml pomegranate juice
100ml blood orange juice
1/4 lemon juice
3 tbsp NONA Spritz
1 tbsp sage syrup optional
4 tbsp aquafaba (chickpea liquid), trust me
200ml ginger beer or ginger ale
The finishing touch
2 sage leaves
a few pomegranate seeds optional
edible gold flakes optional
Instructions
The sage syrup
Put the sugar and water in a small saucepan. Keep 2 sage leaves aside for finishing and squeeze the remaining bunch well once so that the leaves bruise.
Add to the sugar water and heat the mixture over low heat.
Stir constantly until the sugar is dissolved. Leave on low heat for about 5 minutes, stirring frequently.
Turn off the heat and let the sage infuse for at least another hour and the syrup cool.
The mocktail
Take a large goblet (or use a cocktail shaker) that you can seal tightly.
Pour the pomegranate, blood orange and lemon juice, NONA Spritz, sage syrup and aquafaba into the goblet. (In the end, make sure there is still enough space above the liquid! This is essential to get the foam layer when shaking).
Close the goblet and shake vigorously for 1 minute.
Divide the mixture among the glasses (not to the rim).
Pour in the ginger beer and finish with a sage leaf, a few pomegranate seeds and, if desired, the edible gold flakes.
Serve immediately (but don't stress, the foam layer remains intact for a very long time).
