NONA Coconut Passion Fruit
Karolien of Karola's Kitchen created this refreshing cocktail for summer days.
Ingredients for 1 person:
1 orange
1 lime
8 cubes frozen passion fruit
75ml coconut milk
8 to 10 mint leaves
2 stems of lemongrass optional, for finishing
1 passion fruit optional, for finishing
4 tbsp NONA June non-alcoholic gin
1 tsp white granulated sugar
1/4 tsp salt flakes or fleur de sel
crushed ice
Method:
Squeeze the orange.
Scrub the lime thoroughly and grate off the green rind (zest) with a fine grater. Set aside. Squeeze half a lime, with the orange juice.
Put the citrus juice in the blender. Add the frozen cubed passion fruit, coconut milk and mint. Blend until all ingredients are blended. Strain the mixture over a measuring cup or pouring jug (then you can easily pour later), to get all the seeds out.
Prepare the garnishes. Rinse the lemongrass stems and cut a small piece from both the top and bottom. Make a notch in the bottom half lengthwise. (This is not a must, but cutting the lemongrass will release the flavors better.) Cut the passion fruit in half. Set aside.
Mix the lime zest with the sugar and salt flakes. Cut the remaining half lime in half and use it to rub the rim and part of each glass. Cap the rim in the sugar-salt mixture and swirl in the wet side of the glass as well, until you get a nice crystal rim. Now immediately finish the mocktails.
Fill the glasses with crushed ice. Pour into each glass 2 tablespoons of NONA June. Then divide the coconut-passion fruit mixture between both glasses and finish with a stalk of lemongrass and half a passion fruit.
